Es un proceso de pinchado del jam\u00f3n e inmediatamente se huele la cala para saber si el jam\u00f3n es \u00f3ptimo y sus cualidades.<\/p>\n\n\n\n<p>Es muy importante conocer el&nbsp;<strong>punto exacto<\/strong>&nbsp;donde&nbsp;introducir la&nbsp;<strong>cala<\/strong> (herramienta de 12 cm de largo hecha de hueso de vaca), la&nbsp;<strong>profundidad<\/strong>&nbsp;con la que hay que hacerlo y c\u00f3mo&nbsp;realizarlo para que no entre ni aire, ni par\u00e1sitos en el agujero que se produce al introducir la cala en la pieza.<\/p>\n\n\n\n<p>La cala se debe realizar en tres sitios:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>La zona alta de la pata (Codillo)<\/li>\n\n\n\n<li>La zona de salida de la vena femoral<\/li>\n\n\n\n<li>Debajo del hueso de la cadera<\/li>\n<\/ul>\n\n\n\n<p><strong>Un buen jam\u00f3n ib\u00e9rico se ve a primera vista por sus rasgos f\u00edsicos<\/strong>: la pata fina y estilizada, la textura de la grasa blanca, el veteado que forma la infiltraci\u00f3n de grasa en el magro, el brillo de la carne, y  la fragancia intensa y arom\u00e1tica que desprende el jam\u00f3n. &nbsp;<\/p>\n\n\n\n<p>Esta jornada fue muy enriquecedora para ambas partes, unos nos deleitaron con sus propuestas creativas para cocinar nuestro Jacinto Bl\u00e1zquez  y nosotros con alg\u00fan consejo sobre c\u00f3mo seleccionar el mejor jam\u00f3n para sus cocinas.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Aprende el arte de la cala de la mano de Jamones Bl\u00e1zquez, como as\u00ed lo han hecho los 5 chefs con Estrella Michelin que han visitado esta semana los or\u00edgenes de Bl\u00e1zquez en nuestras f\u00e1bricas de Crespos (\u00c1vila) y en Pe\u00f1aranda de Bracamonte (Salamanca).
