{"id":199,"date":"2013-02-13T09:52:49","date_gmt":"2013-02-13T09:52:49","guid":{"rendered":"http:\/\/jamonesblazquez.wordpress.com\/?p=199"},"modified":"2023-01-16T13:09:46","modified_gmt":"2023-01-16T12:09:46","slug":"concept-foodie","status":"publish","type":"post","link":"https:\/\/jamonesblazquez.com\/es\/concept-foodie\/","title":{"rendered":"Concept Foodie"},"content":{"rendered":"<p>Al hablaros del Restaurante Loidi y su magn\u00edfico chef, Carlos Fern\u00e1ndez, os contamos que desde el proyecto Concept Foodie que mantiene junto a su hermano y tambi\u00e9n chef, Daniel, quieren transmitirnos su <strong>obsesi\u00f3n gastron\u00f3mica.<\/strong><\/p>\n<p>Ya conocimos a Carlos, formado en cocina mediterr\u00e1nea, y apasionado de la cocina de vanguardia respetando las tradiciones, que desarrolla su labor como chef ejecutivo del Hotel Condes de Barcelona y desde el Restaurante Loidi, Mart\u00edn Berasategui. Su principal deseo al cocinar es que el cliente, al probar un plato y en su primer contacto con el paladar, tenga la siguiente reacci\u00f3n: \u00abmmmmm, \u00a1qu\u00e9 rico, qu\u00e9 bueno est\u00e1 esto!\u201d. Por su parte, Daniel es chef asesor del <a href=\"https:\/\/olmosrestaurant.com\/\" target=\"_blank\" rel=\"noopener\">Restaurante Los Olmos en Badalona<\/a> y con 27 a\u00f1os ya es todo un experto tambi\u00e9n de la cocina mediterr\u00e1nea. Lleva cocinando 10 a\u00f1os y se inspira en sabores e ingredientes que conoce y que le gustan, para cocinar con la gran pasi\u00f3n que le transmiti\u00f3 su hermano. Se trata de un concepto ingl\u00e9s que define a un apasionado de la gastronom\u00eda, a un amante de la cocina, no s\u00f3lo el chef o el cocinero, sino tambi\u00e9n a aquel que disfruta y degusta un buen plato. Creada en 1984 por Paul Levy, Ann Barr y Mat Sloan para su libro <em>The Official Foodie Handbook<\/em> (El manual oficial para los foodies), la palabra define la ilusi\u00f3n de Carlos y Daniel a la perfecci\u00f3n y quieren hacer de este proyecto la referencia de los foodies en Barcelona. El chef estar\u00e1 con un tiempo previo estimado para preparar el men\u00fa seleccionado (gourmand, gourmet o foodie), atendiendo a las preguntas de los comensales que quieran ver en directo c\u00f3mo se cocina el men\u00fa degustaci\u00f3n, y servir\u00e1 cada uno de los platos, hasta llegar al postre, explicando en cada caso detalles de la cocina para que hacer de la velada un encuentro gastron\u00f3mico inolvidable para los asistentes. Posteriormente, limpian la cocina para dejarla tal como estaba. \u00a1Qu\u00e9 m\u00e1s se puede pedir!<\/p>\n<p>En cuanto al <strong>asesoramiento a restaurantes<\/strong>, ponen a disposici\u00f3n de ellos la ayuda para confeccionar men\u00fas adecuados al tipo de clientela, elecci\u00f3n de ingredientes y presupuesto disponible. Tambi\u00e9n colaboran con la organizaci\u00f3n de la cocina, la formaci\u00f3n del equipo y la presentaci\u00f3n de los platos.<\/p>\n<p>Adem\u00e1s, desde su <a href=\"https:\/\/conceptfoodie.wordpress.com\/\" target=\"_blank\" rel=\"noopener\">blog <\/a>nos mantienen informados de la agenda gastron\u00f3mica y todas las actividades interesantes para foodies, descubrimientos de restaurantes o pasteler\u00edas, otros blogs, informaci\u00f3n sobre material de cocina, protocolos de restauraci\u00f3n o qu\u00e9 copa elegir para servir un vino.
